Ramie's Recipes




Low-Cal Mac & Cheese
  • 3 cups macaroni
  • 1/3 cup flour
  • 2 1/3 cup 1% milk
  • 3/4 cup Fontina cheese (shredded)
  • 1 cup low-fat parmesan
  • 1 cup low-fat or non-fat velveeta (cubed)
  • 1/2 cup bread crumbs
  • 2/14 tsp. salt
  • 1 tsp fresh cracked black pepper
Directions:
Cook macaroni according to package directions.

In a seperate pot, combine milk & flour and whisk over medium heat until combined.  Bring to a simmer, then add parmesan and fontina, a handful at a time, letting each handful melt before the next one is put in.  Remove from heat and stir in macaroni, Velveeta, salt, and pepper.

Pour everything in a 2-qt. pan, cover w/bread crumbs, and bake at 375 degrees for 30-40 minutes
