Ramie Recipe: Chicken BLT Burger

This recipe delivers everything you love about a BLT sandwich and a burger with about half the fat and calories.  It's also perfect for tournament watching, because it's fast, easy, and you can make a lot of it if the boys are over for the games...
 
Ingredients:
  • 1 lb. ground chicken breast (from Roberts')
  • 2 slices of bacon, chopped (from Roberts')
  • 2 oz. high-temp cheddar cubes (from Roberts')
  • 1/4 cup chopped green onions
  • 1 tsp. salt
  • 1 tsp. fresh cracked black pepper
  • 1 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/2 tsp. cayenne pepper
  • 1/2 tsp. chili powder
  • 1/2 tsp. cumin
  • 1/4 tsp. crushed red pepper
  • 2 Tbsp. olive oil
  • 4 tsp. corn starch
  • 4 whole-wheat hamburger buns
  • 1 tomato, sliced
  • Iceberg lettuce
  • Red onions, thin sliced
  • tzatziki sauce (from Roberts')
Directions:
Cook the bacon in a pan until crispy, then place on a paper towl to drain the fat.  Combine chicken, bacon, cheese, green onions, and spices in a large bowl and gently mix together.  Try not to over-mix or squish the meat, because it will make the burgers dense and tough.  Form the meat into four equal-sized patties and refrigerate for half an hour. 
 
Take the chicken patties out of the fridge, brush with the olive oil, sprinkle the corn starch on, and brush again with olive oil.  Meanwhile, preheat the grill  to high heat. 
 
Grill the patties for about 6-8 minutes per side and throw the buns on to lightly toast for the last couple of minutes. 
 
Remove patties and buns from the grill.  Spread about a teaspoon of tzatziki sauce on the buns, top with the patties, tomato slices, onions, and lettuce, and enjoy!
